The Siguenza Family's Recipe for Chicken Pozole



Need an idea for an easy meal the whole family can cook at home while we Quarantine? Herbert Siguenza, his wife Samantha and daughter Belen have shared with us their recipe of "Lazy" Chicken Pozole. Enjoy!

Chicken Pozole

2 large chicken breasts 
1 Tlb. Garlic
4 cups or 1 large can of Green Salsa Verde
2 Cups broth or water w/bouillon cube
1/2 - 1 onion, chopped
16 oz. can of Hominy, rinsed

Coriander, to taste
Cumin, to taste
2 Bay Leaves
Cracked Pepper, to taste
Salt, to taste
Mexican Oregano, to taste

Put ingredients in the crockpot in order listed above. Add a little extra hot water to fill the pot. Cook for around 4 hours, then shred chicken and add back in. Serve and garnish with toppings of choice such as cilantro, chopped onions, cabbage, radish, chile, or lemon juice.
